Autumn Recipes: Apple & Cinnamon Pancakes, Pumpkin Muffins
Super cinnamon & apple pancakes:
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup buckwheat flour OR wheat germ
- 3 1/2 teaspoon baking powder
- 1/2 tsp salt
- 1 tsp sugar
- 1 1/4 cup milk (substitute: soy, coconut or oat milk)
- 1 egg
- 1 tsp vanilla extract
- 2 tbs ground cinnamon
- 1 sliced and chopped apple
- Optional: 1/4 cup chopped walnuts
Directions:
- In a mixing bowl, combine all the dry ingredients.
- Add egg, milk and vanilla. Use whisk to mix together.
- Add apples and nuts, mix well with spoon.
- Oil and heat pan or griddle.
- Scoop batter onto warm griddle.
- Brown on both sides and serve.
Perfect pumpkin muffins:
Ingredients:
- 1 1/4 cup all purpose flour
- 1/2 cup buckwheat flour
- 1/2 light brown sugar
- 1/2 tsp salt
- 1 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/2 cup EVOO
- 2 eggs
- 1 tsp vanilla extract
- 1 15 ounce can pumpkin puree
Directions:
- Preheat oven to 375 degrees.
- Place 12 muffin liners into the wells of your standard size muffin pan.
- Combine all dry ingredients.
- In a separate bowl, whisk together the wet ingredients (eggs, EVOO, pumpkin, vanilla extract.)
- Combine wet ingredients with dry ingredients and stir together.
- Evenly distribute the batter into the muffin liners. Each liner should be filled approximately 3/4 full.
- Bake muffins for 20 minutes. Check the center with a toothpick to confirm their readiness.
